The name of this famous Chinese tea means “Iron Goddess of Mercy,” named after Guanyin, the Bodhisattva of Compassion. Legend has it she guided a poor farmer in a dream to the leaves of this exquisite tea. After a painstaking process of rolling the freshly picked, partially oxidized leaves into a tightly wrapped nugget, it virtually unfurls in steeping water. Orchids, peaches and caramel are often what come to mind when experiencing this exceptional tea.
